1/2 cup Red Onion, diced
2 cloves Garlic, thinly sliced
1 lb. boneless Pork Chops
2/3 lb. sliced Ham
1/2 lb. Swiss Cheese (8 slices)
4 Challah Rolls
2 tbsp. Unsalted Butter
4 tbsp. Mustard
1 jar Gordy’s Sweet Chips
2 tbsp. Vegetable Oil

Heat vegetable oil in a large skillet over medium heat, then add red onion and garlic. Add salt and pepper to taste and cook until fragrant (3-4 minutes), then add pork chops. Cook without moving, until browned, 2-3 minutes, then flip. Cook until done (temperature should reach 140ยบ on a meat thermometer), about 4 minutes longer. Remove from the skillet and let rest for at least 5 minutes. Slice thinly, on a bias.
- Split rolls and spread each with 1 tbsp. mustard. Layer Gordy’s Sweet Chips (10-12), pork, ham, and then cheese, topping with more Sweet Chips as desired before closing the sandwich.
Melt butter over medium low heat, then transfer sandwiches to the skillet (you may need to do this in shifts). Flatten sandwiches by layering a heavy bottomed skillet overtop, and cook until the bottom bun is crisp, roughly 7 minutes. Flip sandwiches, layer with skillet, and cook until cheese has melted and sandwich is warmed through. Serve immediately.
